This was another clean, simple meal – an absolutely ginormous flank steak that I cooked in coconut oil and seasoned with ghee, salt, and some all-purpose seasoning along with some broccoli with the same seasoning on it. I like to pan-sear my steaks and finish them in the oven… this guy barely fit in my big pan! But I preheated the oven to 400 and got a decent sear on both sides of this before putting it in. Flank steak is a leaner cut and it’s advised to eat medium rare (which is perfect to me) so I only finished in the oven a total of 8 minutes (4 minutes then flipped it then another 4 min); it was relatively thin for a steak. Turned out fantastic and you know I gotta have my cruciferous veggies at every meal and since my fiance likes broccoli, it’s our usual go-to. I did have some shrimp as a little appetizer and some mixed nuts/seeds as a side cause I’m a savory guy and I crave my saltiness. Lemon water to drink (as always) and that’s it! Overall, I think it took less than half an hour to prep/make, plus, there was enough for me, her, and still some left over for another meal!
